It’s been cold this weekend so I figured I’d post a recipe that will warm you up! I find this recipe to be so yummy that you don’t necessarily need other foods to accompany it…it’s so good that you could eat it by itself if you so desire!
Sweet Potato Bake
(makes about 10 servings)
3 cans (15 oz. each) sweet potatoes – drained
1/4 c. butter – melted
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
3 cups mini marshmallows
Preheat oven to 350°.
Beat the sweet potatoes, butter, cinnamon, salt, and nutmeg in a bowl with mixer on medium speed until blended.
Spoon into a lightly greased 1.5 qt. baking dish.
Sprinkle marshmallows on top.
Bake 15 – 20 minutes until it’s heated through and the marshmallows are lightly browned.
